Items of the Suggested Dinner Meal Menu:

Roasted Ham (see: this Wix.com foodie website); al dente Steamed Carrots, Broccoli and Celery Parmesano; Buttered Plain Rice (avoid Basmati rice for this one meal); and finally the Sweet Potato Casserole.



1. Ingredients to the Sweet Potato Casserole:

-6 medium sweet potatoes

-3 large carrots

-3/4 c Farmers cheese

-2 tsp black pepper

-2 tsp salt

-2 tblsp dried parsley

-4 1/2 c cream of corn soup (condensed)

-3 tblsp all-purpose baking flour as thickener

-3 c plain cream cheese

-5 cloves garlic minced

-3/4 of a yellow onion chopped

-2 tblsp canola oil

-4 tblsp butter



2. Method to Make Cream Sauce with Veggies:

-Prepare the veggies of sweet potatoes and carrots by peeling and rough cutting lengthwise and cook lightly by steaming to al dente.

-For 10 mins sautee in oil and butter over MED heat the garlic and onions, and then add the mascerated veggies of cooked al dente sweet potatoes, carrots and cream of corn condensed soup, condiments of pepper, salt, parsley and remove momentarily from heat and mix in the flour thickener and cream cheese as the matrix for the a la King.



3. Preparing Out the Potato Bisquits:

Take 2 cannisters of Pillsbury Boy biscuits, thaw at room temp. for 1 hr, then remove coverings and lay out on cutting board and slice if not separate 1" thick in medallions and then top with 1 doz potato biscuits per 2 pre-greased glass baking pans or casserole dishes, in an array.



Cooking Instructions:

Brush on the biscuits a whole milk baste to make for golden brown.

Finally sprinkle the cheese on top evenly on both the biscuits and sweet potato mix base or layer. Cook for 75 mins at 165 deg C. Test until golden brown the biscuits with a toothpick that goes in and out cleanly.



Serving Suggestion:

Sweet Potato Vegan Casserole with Bisquits (main dish)

Ham Bake Roast (optional)

Veggie Plate a la Parmesano (optional)

Buttered Rice (optional)

COOKING TIPS BY THE TIME DINNER COMES ROUND WITH FAMILY AND FRIENDS:

Check for doneness with cooking time: e. g. for roasts, use a roasting thermometer, a toothpick for breads, puddings and cakes; note the need to pre-coat the sheet pans for baking with shortening/oil. For pasta and vegetables follow carefully instructions to be al dente adding enough water, gentle boiling with salt added and tasting regularly the bite, followed by draining and washing several times.
