Ingredients:
Fruit: passion, guayabano, pineapple, atis, mangosteen and rosel. (Other non-tropical flavours are orange, peach or strawberry.)
4 c fruit syrup
4 scoops vanilla ice cream
1/2 c milk
2 c soda streamed H2O
Equipment:
Soda Stream(R)*
Processor (pulsed)
Cutting board with knife
Large mixing bowl with rubber scraper
Method:
To prepare the fruit concentrate or syrup add the sliced peeled fruit or pitted sections with heavy sugar through a mechanical collander sieve or strainer and collect into a bowl then passing the mash through a cheese cloth and store immediately at 5 deg C in a sealed container.
At the Fountain Stop, per glass, add after mixing ingredients, the added creamed syrup and finish off with soda streamed carbonated water just before serving as a fun cocktail to guests in waiting.
