Ingredients of Halo-Halo Sundae with Ice Cream Canadian-style: 6 large parfaits or servings


1 1/4 c yellow cooking banana (Filipino store avail.)

1 c jackfruit

1 1/2 c purple yam (ube) (Filipino store avail.)

1 c nata de coco (from jar, Filipino store avail.)

2 c palm fruit (from jar, Filipino Store avail. or Oriental Food Store)

3 1/2 c treacle (sugar syrup) [1 1/3 c maple syrup + 2 c "golden" sugar syrup + 1 c honey + 1/2 c Skrewball Peanut Butter Whiskey(R)]

4 lemons for juice

4 limes for juice


Toppings:

12 tblsp lemon zest

12 tblsp lime zest

12 candied marascchino cherries (red)

12 candied cranberries (jar)

2 c total Purple yam (Ube) ice cream

2 c total coconut fullcream ice cream

2 c total vanilla ice cream

18 mint leaves (small)


Instructions:

(Warning: labour intensive and time consuming so prepare well ahead with the crew for a Sundae party at nite or in the heat for a snack.)

  1. Get the fresh fruit as indicated and chop into uniform bite size pieces.

  2. Cook bananas, root crops and then chop into bit size pieces.

  3. Get fresh jackfruit to clean out from seed, chop then cook in bite size pieces.

  4. Obtain preserves in a bottle of: nata de coco, palm fruit and cranberries. Chop into chunklets.

  5. Prepare treacle or syrup by taking sugar syrup and maple syrup and honey and finally add the Skrewball whiskey in a large saucepan over MED heat and stir with a whisk taking turns to boil up to 45 mins.

  6. Mix fruit and other ingredients into the treacle for the parfait filling to layer in the glass.

  7. Layering of parfaits: in 6 large cups add in the mixture of banana, ube, jackfruit, nata de coco, palmfruit and candied cranberries in treacle.

  8. Top or finish off, add small scoops (3) of each of the (3) icecreams of purple yam, coconut and vanilla (you can try mint chocolate in addition).

  9. Add atop the zest of lemon and lime and finally top with (3) marascchino cherry halved and mini mint sprigs (3) as a jubilee.


Options: Do not add any coffee flavourings, young coconut meat, caramel sauce or chocolate syrup.

IN PRACTICE SOME
COOKING TIPS BY THE TIME DINNER COMES ROUND WITH FAMILY AND FRIENDS:

Keep it simple. Note and go through each step of the cooking process from prep time (including arranging ingredients), utensils, including pots and pans, preheat the oven and set timer for cooking time, after let set aside to cool down according to instructions; serve also in the manner for presentation as recommended by the recipe-maker.

Check for doneness with cooking time: e. g. for roasts, use a roasting thermometer, a toothpick for breads, puddings and cakes; note the need to pre-coat the sheet pans for baking with shortening/oil. For pasta and vegetables follow carefully instructions to be al dente adding enough water, gentle boiling with salt added and tasting regularly the bite, followed by draining and washing several times.

As a rule we prepare and present foods readily using only the implements and serving dishes and/or pans that allow for this to avoid any extra artistry thru decorative needs as is limited, involved with the dish. Alternatively follow according to script the illustrated suggestion on the packaging.
