CoCo Rolls (Top Side Down):
Made from 1/2 Rice Cake Bebingka and 1/2 Cassava Bebingka topped with sprinkles of toasted coconut and caramelized white granulated sugar.
(for recipe: rice Bebingka is made with bicarbonate powder, rice flour, coconut milk, eggs, milk, cheese, sugar and vanilla)

Choices of Fruit "Preserve" Base (Top Side Up) in Slices or as Compote:
1. Pineapple
-cloves
-cinnamon
-cardamom
-white sugar
2. Peaches/Apricots
-vanilla
-cinnamon
-cardamom
-brown sugar
3. Mango Under Aspic
-cinnamon
-cloves
-nutmeg
-brown sugar
4. Banana
-dark rum (soaked)
-white sugar
-vanilla
Cooking Instructions:
Baked in a spring form pan for 25-30 mins at 320 deg C until done and fruit is allowed to caramelize.
Turn upside down and serve in sliced portions like coffee cake for snack or dessert.
